We wanted to experiment with the best of local produce, and have used Lanark Blue cheese with the broccoli instead of the usual Stilton. Lanark Blue is made from ewe's milk so ideal for anyone with a cow's milk allergy. This is delicious. The broccoli is tasty and so good for you, and combined with the Lanark Blue its creamy as well.
We use local broccoli and onion, and a little salt. Some customers have served this at dinner parties and said they made it themselves. It certainly is a great 'occassion' soup, but also great for an everyday pick me up!
