Our Venison dishesVenison is usually kept for special occassions, but its a traditional Scottish meat- rich, tasty but surprisingly low in fat and colesterol. Our venison come from the estates in Clydesdale, and our sausages are made by our local butcher to old family recipes. The sausages are gluten free as well as the casseroles and all our other ready meal dishes. We use the shoulder in our casseroles and slow cook on either the hob or in the oven to bring out all the taste. We use old family estate recipes, and add some herbs and seasoning, and some red wine to the casseroles. Nothing else is needed really to bring out the tantalising taste of freshly cooked venison, always in season and a really delicious alternative to beef or lamb.
